The champagne house was founded in 1829. Bollinger sells about 2 million bottles a year. Compared to the 25 million bottles from market leader Moët & Chandon, it is a small manufacturer.
80% of the grapes come from a grand cru municipality or a premier cru municipality. Some of the wine is lagered in oak barrels and the bottles mature in the cellars for at least three years before being shipped. The Special Cuvée is described as a complex cuvée with a long aftertaste.
